Beautiful and easy to prepare Endive Beet Bites topped with walnut crumble and Caesar Dressing.

These Endive Beet Bits are not only pretty, they taste ah-mazing too! Now, I’ve been told that endive is a bit of mystery to some, but it is a really great leafy vegetable that is incredibly light and flavourful. It’s refreshing to have in a salad, or perhaps an appetizer (see what I did there?), and goes really well with beets and walnuts. Topped with Litehouse Organic Caesar Dressing, this appetizer comes together so quickly once the beets are cooked. Not into endive at all? Butter or Ice Berg Lettuce will do the trick here as well.

I’ve been trying to branch out with more veggies with my kids and so far using their favourite colours (aka purple) works really well. We’ve been on a purple food spree lately which is adventurous and fun all at once. Do they love endive or beets? - 2 medium beets tops trimmed
- 1 bay leaf dried or fresh
- 1/2 tsp salt
- 3 heads of endive purple or green, OR Butter or IceBerg Lettuce, ends trimmed and separated into individual leaves
- 1/4 cup crumbled walnuts roughly smash in a bag with a pan
- 1/2 cup Litehouse Organic Caesar Dressing
- Fresh herbs to garnish chives or dill, about 1 tbsp chopped

Place beets in a medium saucepan with bay leaf and salt. Cover with water and bring to a boil. Reduce heat to medium and cook at a strong simmer for 15-20 minutes or until beets are tender when poked with a fork. Remove from heat and drain. Once cooled enough to handle, remove skin by rubbing with paper towel or by using a vegetable peeler. Slice beets into thin wedges.

Top each endive leaf with 2 slice of beets, walnut crumble, Caesar dressing, and fresh herbs.
