I’m back with another #CookWithCampbells meal with this Slow Cooker Thai Tomato Chicken and Broccoli. It will have dinner on the table with about 5 minutes of prep and letting the slow cooker do the rest!
You might remember my post for this One Pot Creamy Roasted Red Pepper and Tomato Pasta and all my nostalgic feelings for Campbell’s® Soups and how they can immediately bring me back to my childhood. I love the cozy vibes and comforts from years ago reimagined into modern day food.
Meals that have a bump in nutrition thanks to vegetables (there’s no way we’re not having vegetables at every meal), are appealing to adults and kids alike, and are easy for busy parents to get on the table are meals that I need much more of. I only make one dish for dinner and it has to count as I’m not into any complaints about the food, nor am I willing to skimp on a wholesome meal.
My kids loved how the creamy coconut tomato sauce (dairy-free) was ample to coat the chicken, broccoli, and rice. Sauce is always a win with kids and this one is full of kid-friendly flavours.
This recipe makes enough for 6 healthy servings which means lunches are sorted for the next day as well.

Easy slow cooker family meal. Full of kid-friendly flavours and it's so easy to add the ingredients and walk away.
- 3 medium chicken breasts approx. 1.5 lbs
- 1 can (330 ml) Campbell’s® Tomato Basil & Oregano Condensed Soup
- 1 can (330 ml) coconut milk regular or light will work
- 2 tbsp soy sauce
- 2 cloves garlic, minced or finely chopped
- 1 large crown broccoli, chopped into large florets (thick bottom stem discarded)
- 1 lime, juiced

Place Campbell’s® Tomato Basil & Oregano Soup, coconut milk, soy sauce, and garlic into slow cooker. Mix with a whisk until combined.

Add chicken breasts and turn in slow cooker to coat with sauce. Place lid on slow cooker and set cooking time to 1.5 hours on high or 3.5 hours on low.

With 15 minutes remaining (if slow cooker is set to high, if set to low use the 30 minutes remaining mark) add broccoli florets and replace lid.

Once done cooking, pull chicken breasts with two forks* and mix in lime juice.

Serve with rice or rice noodles.
* I do this directly in the slow cooker, but you can remove the chicken breasts, pull them and then return to the slow cooker to serve with all the delicious sauce and broccoli.
