Blood Orange Mimosa is the perfect combination of blood orange and pomegranate seeds, add some tequila and sparkling wine for a flavour party!

It’s the freaking weekend! I’m going to have this Blood Orange Mimosa lined up aaaalllllll weekend long! It’s part of my collaboration with Joey (website) that I posted about yesterday (link here). You remember don’t you? Those Savoury Corn, Jalapeño and Queso Fresco Waffles with Salsa Verde Waffles with Salsa Verde? Yeah, I though so. This drink was mostly all Joey’s. I threw in some commentary on the recipe, but truthfully I was pretty caught up in the waffles (and my kids).

This recipe is easy to massage out and make your own. If it’s too tart add a teaspoon of simple syrup or agave. If you want more pomegranate flavour add pomegranate juice along with the blood orange. Any which way, I’m certain you’ll love this recipe. The flavours are bright and the colour is vibrant, it’s pretty much what brunch cocktail dreams are made of.
