Here we go team. I’ve got another 15 minute meal to combat picky eaters featuring my pantry staple and meal rescuer … rice. And what a way to do it if I might say. Bacon. My undeniable love for bacon. Now, bacon is one of my picky eaters favourite foods making this dish a welcome one at our dinner table.
This BLT Rice Bowl with Avocado Lime Dressing is a total #WeekdayWin as it is made in under 15 minutes, has fresh tasty ingredients, and a dressing that just might be the best compliment to a salad yet.
This recipe is super easy and straightforward, yet packed with great flavours. Because bacon and avocado have never ruined my day that’s for sure. I served the dish as shown above and let the older kids (3.5 year olds) help themselves.
My kids are into lettuce and know that vegetables are not optional at any meal, so I don’t have to worry about them skipping out on it if they serve themselves. I also show them how I build the salad in my own bowl before serving this rice bowl recipe as a family style dish to them.
We’ve got all the usual priorities here – iron from the meat, wholesome carbohydrates, and lots of vitamins and minerals from the veggies. There’s a ton of nutritional value in the dressing as well. Which was so good I wanted to drink it from the jar.
Creamy avocado blended with lots of lime juice and I added some cumin and chili powder for some extra tang we all love and quite honestly needed in a salad type dish.
Has anyone had any successful weekday wins? Having rice and other staples like olive oil in my pantry are my keys to success.
I’m weird and always have lettuce in my fridge (keeps really well in the crisper wrapped in paper towel) as well as tomatoes because they are my picky eater’s favourite “vegetable” (next to frozen peas, which I don’t cook I give to my kids frozen because they love it and they help with teething).
I’m a big rice cooker / pressure cooker rice person. Do you have a favourite hands off why to cook rice? I love that I don’t have to be at the stove to get parts of the meal on the table.

- 2 cups rice*
- 1/2 lbs bacon, sliced into 10 cm wide pieces
- 1 small head of lettuce, thinly sliced such as Romain Lettuce or Green Leaf
- 1 pint cherry tomatoes, halved
- 1 small ripe avocado
- 1 cup roughly chopped cilantro
- 1/4 cup fresh lime juice from 3-4 limes
- 1/4 cup olive oil
- 1/2 tsp cumin
- 1/4 tsp chili powder
- 1/4 tsp salt

Prepare rice as per package instructions. Set aside.

Cook bacon in a medium skillet over medium-high heat until browned and crispy, stirring occasionally for about 5 minutes. Remove from pan and drain on paper towel. Set aside

Place avocado, cilantro, lime juice, olive oil, cumin, chili powder, and salt in a blender. Mix on high until smooth.

Serve rice with bacon, lettuce, tomatoes and the dressing on the side.
* or previously cooked rice equal to 5-6 cups cooked. I’ve used both white and short grain brown rice to great success.

The weather is mostly calling for bowl meals out West here. This one is nice in that there’s still some comforts in the bacon and rice, but freshness in veggies. And the dressing is not to be missed!
I was going along here, thinking that it all looked pretty darn tasty. Then I saw the dressing… and I went from ‘oh this looks good’ to ‘I NEED THIS NOW.’ That avocado dressing looks absolutely incredible. And while I realize that this particular connection is pretty specific, but I often order a sushi roll that has avocado on top along with bacon and asparagus inside, and I am ALL ABOUT the bacon/avocado combo. Seriously, yum. This sounds pretty amazing, all-in-all, and I love the use of a bit of a bacon to sort of anchor the meal without calling for a ton of meat. Well done Samantha.
