Classic BLT gets a delicious spin with this BLT Rice Bowl recipe. The Avocado Lime Dressing is a creamy (dairy-free) flavourful sauce that will need to be doubled.
Here we go team. I’ve got another 15 minute meal to combat picky eaters featuring my pantry staple and meal rescuer … rice. And what a way to do it if I might say. Bacon. My undeniable love for bacon. Now, bacon is one of my picky eaters favourite foods making this dish a welcome one at our dinner table.
This BLT Rice Bowl with Avocado Lime Dressing is a total #WeekdayWin as it is made in under 15 minutes, has fresh tasty ingredients, and a dressing that just might be the best compliment to a salad yet.
This recipe is super easy and straightforward, yet packed with great flavours. Because bacon and avocado have never ruined my day that’s for sure. I served the dish as shown above and let the older kids (3.5 year olds) help themselves.
My kids are into lettuce and know that vegetables are not optional at any meal, so I don’t have to worry about them skipping out on it if they serve themselves. I also show them how I build the salad in my own bowl before serving this rice bowl recipe as a family style dish to them.
We’ve got all the usual priorities here – iron from the meat, wholesome carbohydrates, and lots of vitamins and minerals from the veggies. There’s a ton of nutritional value in the dressing as well. Which was so good I wanted to drink it from the jar.
Creamy avocado blended with lots of lime juice and I added some cumin and chili powder for some extra tang we all love and quite honestly needed in a salad type dish.
Has anyone had any successful weekday wins? Having rice and other staples like olive oil in my pantry are my keys to success.
I’m weird and always have lettuce in my fridge (keeps really well in the crisper wrapped in paper towel) as well as tomatoes because they are my picky eater’s favourite “vegetable” (next to frozen peas, which I don’t cook I give to my kids frozen because they love it and they help with teething).
I’m a big rice cooker / pressure cooker rice person. Do you have a favourite hands off why to cook rice? I love that I don’t have to be at the stove to get parts of the meal on the table.
My other #WeekdayWin recipe was this One Pot Tex-Mex Rice. Using rice in one pot meals is a great way to infuse extra flavour into the rice.
I’d love to hear your favourite #WeekdayWin recipe to date. Any tips for getting through midweek dinners are ones that I can’t wait to get on board with. Be sure to tag #WeekdayWin and so we can bask in your success.

Gorgeous salad with bacon and avocado dressing. Looks delicious! That is wonderful that your kids will eat their greens.
Thanks Cheri. Yes, I’m lucky my kids love lettuce, but I did start them on salad very early. All vegetables actual. I chat a bit about my tips and how I get my kids into veggies during my Facebook Live events – please feel free to tune in and ask me any questions this Wednesday March 15th 🙂
I love these kind of bowls. The dressing is perfect, and of course, BACON! Delicious.
Great combo right? So good for picky eaters and gets on the table fast without compromising on nutrition.
This looks so simple, healthy and delicious! Perfect for week-night meals when it’s difficult to get anything on the table with busy lives. My family will love the addition of bacon and avocado!
Thanks Shauna! You very much summed up my goals for this recipe. I hope you get a chance to enjoy it with your family, tag me or #weekdaywin if you do. I’d love to hear your take on this dish.
I love recipes that are simple like this! Bacon makes anything good, doesn’t it? And that dressing does look amazing!
Agreed on the bacon bit Cathy – makes my life a little better 😉 I highly recommend the dressing for most salads 🙂
This looks amazing! I am all about these one-bowl meals lately, and I love the way you’ve used Minute Rice to speed up the prep time on this recipe… definitely the kind of weekday win I can get on board with! 🙂
The weather is mostly calling for bowl meals out West here. This one is nice in that there’s still some comforts in the bacon and rice, but freshness in veggies. And the dressing is not to be missed!
I was going along here, thinking that it all looked pretty darn tasty. Then I saw the dressing… and I went from ‘oh this looks good’ to ‘I NEED THIS NOW.’ That avocado dressing looks absolutely incredible. And while I realize that this particular connection is pretty specific, but I often order a sushi roll that has avocado on top along with bacon and asparagus inside, and I am ALL ABOUT the bacon/avocado combo. Seriously, yum. This sounds pretty amazing, all-in-all, and I love the use of a bit of a bacon to sort of anchor the meal without calling for a ton of meat. Well done Samantha.
Hey thanks! High fives all around for bacon and avocado combo in my opinion. I’m also going to make that exact order next time we’re out for sushi – thank you for that little tip! The dressing is truly sublime. I hope you get the chance to try it!
Oh I love MInute Rice, it saves many busy weeknights for me. This bowl looks incredible!
