Cheesy Pierogi Casserole Recipe

Lots of cheese-pull, crispy bacon bits, and fluffy pierogi make up this Cheesy Pierogi Casserole. 5-ingredients and a hot oven bring this simple, yet outstanding Pierogi Casserole recipe together.

You guys …. this was such a great dish to come up with and make on repeat for recipe development. Golden bubbly cheese curds, crispy bacon pieces, and fluffy tender pierogi literally made dinner time cravings become a satisfying reality.

I used Paradise Island Foods Cheese Curds and they were a hit over here! One of my girls had thirds of this Cheesy Pierogi Casserole and wanted all the leftovers for lunch the next day too. 

Why use this specific cheese curd? As you all know, I love supporting local and Paradise Island Foods is a local West Coast brand (straight from my hubby’s hometown). 

Any product that goes “au natural” with 100% Canadian milk and no modified milk ingredients gets my vote.

They’re also conveniently located in the diary section at my local grocery store with a wide range of hard and semi-soft cheeses.

This pierogi casserole comes together so simply and quick! It’s minimal prep and cleanup thanks to the use of 4 ingredients and one pan.

You might be asking if you can cook pierogi in the oven? Absolutely! They need a quick toss in a bit of oil, or add some broth like we’ve done here to help them cook evenly.

The cheese curds melted superbly in this casserole. Thank goodness I was able to resist snacking on them too much so I could use them for this casserole recipe.

The pierogi casserole recipe makes a larger serving but is incredibly easy to half to make it reasonable for a family of 4.

For substitutions and variations, skipping the bacon would make this dish vegetarian. 

I have tried using crumbled crispy Mild Italian Sausage in lieu of bacon to great success as well.

I think the bacon does go better with the cheese curds, but that’s a subjective opinion on how tasty cheese curds and bacon go so well together. Cheesy pierogi casserole right out of the oven with golden bubbly cheese.

What goes with pierogi for dinner? 

  • A simple, fresh salad like this 4-Ingredient Cucumber Salad.
  • Steamed Broccoli – always a kid favourite over here.
  • My kids favourite salad featuring lettuce with lots of chopped vegetables

Ingredients
  • 400 grams Paradise Island Foods cheese curds
  • 1.2 kilograms frozen pierogi any flavour will work and this equals 2 x 21 oz bags of frozen pierogi
  • 1/2 cup vegetable or chicken broth
  • 6 slices cooked bacon finely sliced*
  • 3 medium green onion, finely sliced
Metric - US Customary
Instructions
  1. Preheat oven to 425° F and lightly oil or spray with non-stick spray an oven-proof pan (about 9" x 13").

  2. Place pierogi in pan and pour broth over top. Scatter cheese curds over top of pierogi.

  3. Place in oven and bake for 30-35 minutes, until pierogi are cooked through and cheese curds are golden brown and bubbling.

  4. Scatter bacon and green onion over top.

* if you don't have cooked bacon, simply cook bacon while pierogi are in oven cooking
