Cheesy Smashed Potatoes friends!! With the flavour of tomatoes and basil — a total YUM bomb! These potatoes are perfectly crispy on the outside, coated in an irresistible Tomato Basil seasoning, and topped with melted cheese. Need I say more? How about if I mentioned that these potatoes are made start to finish in under 20 minutes?!

How to make smashed potatoes:
“Smashed” potatoes differ from mashed potatoes in the sense that smashed potatoes are left whole, just flattened slightly. This makes Creamer potatoes perfect for smashed potatoes since Creamer potatoes are fully mature little potatoes. Creamer potatoes also have a thin delicate skin that is not only edible, but also delicious. The skin is perfect for crisping up in this Smashed Potato recipe.
To make smashed potatoes, the potatoes need to be partially cooked and here we microwave them for a few minutes out of convenience. The potatoes can also be parboiled or cooked in the oven if you prefer to go that route.
Then the potatoes get coated in some sort of fat – oil or melted butter specifically. The oil/butter coat the potatoes and then they are ready for “smashing”.
To smash a potato, take a fork and gently press down on the potato (like in the photo below!). That’s it, that’s all. A truly marvellous method to ensure more surface of the potato exposed to hot air of the oven to end up nice and crispy – the perfect vessel for cheesy toppings!
My love for potatoes knows no bounds, however this Crispy Smashed Potatoes recipe is one of my all time favourites. The convenience of the Creamer potatoes (no washing or peeling required!) and the short cooking time thanks to the microwave are both phenomenal qualities in this recipe, BUT the flavour is what steals the show. The flavour is highly addicting and I’m already looking forward to making them again.

Crispy smashed potatoes with delicious tomato basil seasoning.
- 1 lbs (454 grams) Microwave Ready Tomato Basil Little Potatoes
- 1 tbsp olive oil
- 1/2 cup grated mozzarella cheese
Preheat oven to 425° F.
Follow package directions for cooking potatoes for 3 minutes.
Carefully remove tray from microwave and add oil and seasoning package to container. Toss until seasoning covers potatoes.
Place seasoned potatoes on a parchment or foil lined baking tray and smash with a fork. Top with cheese and bake for 15 minutes or until cheese is melted and golden brown.
