Chicken and Potato Bake with Cheese

This Cheesy Chicken and Potato Bake is a delicious and easy one pan or foil pack dinner – it’s almost effortless! A scrumptious family favourite!

It’s great when dinner comes together quickly after a few fresh, nourishing and delicious ingredients are tossed together. It’s possibly even better when you add a bit of cheese for some melty goodness (cheese pull = everything). 

And since we’ve arrived towards the end of Spring, any wholesome meal I can get on the table quickly with less cleanup, means more time with my family having fun outside or taking meals like this camping with us. This Cheesy Chicken and Potato Bake is so convenient to whip up in a foil package – I promise!

Take your chicken frozen in the cooler and when it’s defrosted add it with the Little potatoes and desired other vegetable (such as broccoli or cauliflower) and you’re golden for dinner. One of our other favourite foil packet recipe has to be this Cod, Chorizo and Potato recipe — YUM!

This recipe comes together so quickly thanks to The Little Potato Company’s Oven | BBQ Ready line. I’ve used their Garlic Herb flavour here, but any of the awesome flavours will work – Onion & Chive or Roasted Red Pepper & Onion too. These packages are so easy because they come with fresh Creamer potatoes, pre-washed, no peeling needed, and include the seasoning pack with the cooking tray. All you have to do is roast! Cheesy Chicken and Potato Bake with raw potatoesI used broccoli in this recipe because my kids enjoy roasted broccoli, simple as that. I pulled a piece of chicken without any cheese on it for my one daughter who still dislikes cheese (she does try cheese every few months because we all love it, but she’s yet to acquire the taste for it). 

Other vegetables like cauliflower or even asparagus would work well, simply adjust cooking times to suit the additional vegetables your family enjoys the most. With summer coming in hot (pun hopefully intended), I’m thinking some grilled corn on the cobb would be fantastic as well.

This Cheesy Chicken and Potato Bake is a delicious and easy one pan or foil pack dinner. Wholesome, almost completely hands off, and oh so tasty!

Ingredients
  • 1 lbs Little Potato Company Oven | BBQ Ready package (any flavour, I used Garlic Herb here)
  • 1 lbs boneless / skinless chicken breasts (about 1 lbs.)
  • 2 tbsp olive oil
  • 1/2 cup grated cheddar cheese or mozzarella cheese
  • 2 cups broccoli florets (about 1 large head of broccoli)

Instructions
  1. Preheat oven to 425° F. Remove top and seasoning packet (set aside) from potatoes.

  2. Cut chicken breasts lengthwise (down the middle from top to bottom so you end up with 2 long pieces per breast).

  3. Toss chicken, olive oil, potatoes, and seasoning packet together in potato foil dish. Place in oven and bake for 20 minutes. Add broccoli at this time and toss with potatoes and chicken. Return to oven and bake for another 15 minutes. If you run out of space in the potato package use a foil lined baking sheet.

  4. Add grated cheese on top of chicken, potatoes, and broccoli and bake for 10 minutes more until chicken has reached an internal temperature of 165° F and potatoes are fork tender.
