These Chocolate Brownie Cookies are an easy one bowl cookie recipe that can be whipped and enjoyed in less than 30 minutes!
** the photos were updated December 2017. I also wanted to remake and test the recipe (again, for about the 9th time) as one of my friends had some trouble with the batter thinning out. For me, the recipe still holds and I think their pan or oven was too warm. I’ve added a note to the recipe to ensure that the temperature is accurate.

These Chocolate Brownie Cookies are an easy one bowl cookie recipe that can be whipped and enjoyed in less than 30 minutes!
- 3 cups icing sugar (powdered sugar)
- 3/4 cup unsweetened cocoa powder
- 1 tsp kosher salt
- 2 large egg whites
- 1 large egg
- 4 ounces dark or bittersweet chocolate, roughly chopped
- 3 tbsp cacao nibs, optional

Preheat oven to 350° F and position two racks, one in the upper third of the oven and one in the lower third of the oven*.

Whisk together sugar, cocoa powder, and salt in a large bowl. In the same bowl, add egg whites and eggs. Whisk until combined.

Fold in chocolate and cacao nibs (if using).

Drop by the tablespoon (actually use a tablespoon measuring device to get consistent sizes), spacing 2" apart on parchment lined baking trays. You'll most likely need to large trays.

Bake for 14-16 minutes, rotating once at the halfway mark.

Let cool on pan. The cookies will continue to firm up.
* ensure the pans are at room temperature or colder. If warm, the batter will thin out and cookies will burn.
