There’s nothing that brightens this dreary rain like tropical flavours. We all loved this refined sugar-free and crazy tasty Coconut Lime Loaf. It’s perfect for this time of year where the weather is crap, we’re dreaming of tropical vacations, and we’re not interested in over-indulging post-holidays.
I’m all about still enjoying delicious and tasty food without going bananas with sugar. This loaf is sweetened with coconut sugar, which has a similar effect as brown sugar relieving me of any food related guilt.

This Coconut Lime Loaf is a one bowl easy to prepare quick bread. Brighten up your day with this vibrant Coconut Lime Loaf!
- 3 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 tsp lime zest
- 3/4 cup coconut sugar (or sub with 1/4 cup granulated sugar and 1/2 cup brown sugar)
- 1 large egg
- 1 cup coconut milk
- 1/4 cup fresh lime juice
- 1 tsp vanilla extract
- 2 tbsp coconut oil (or sub with canola or olive oil)

Grease a 9"x5" loaf pan and preheat oven to 350° F.

In a large bowl, whisk together flour, baking powder, salt, lime zest, and sugar.

Make a well in the middle of dry ingredients and add egg, coconut milk, lime juice, vanilla extract, and oil. Whisk wet ingredients together in a couple of strokes. Using a wooden spoon or a spatula, combine all ingredients in a couple of strokes. Some lumps are okay, batter should be barely blended.

Pour batter into prepared pan*. Bake for 50-55 minutes or until a toothpick (or cake tester) comes out clean). Cool for 15-20 minutes in pan, then fully cool on a rack.
* add additional lime zest and shredded coconut if desired.
