Baking fish is my preferred cooking method. Here, the fillets basically steam in the foil packets creating moist pieces of baked fish. The Creamer potatoes and chorizo are cooked longer than the fish resulting in roasted potatoes that has some colour and crunch.
I use The Little Potato Company’s Terrific Trio Little Potatoes for easy and quick cooking (they’re quartered), a more colourful meal, and more to my mom concerns – a more nutritious dish for my family.
The Terrific Trio are blue, red, and yellow Creamer potatoes that take a simple fish dish and raise it up to be a densely nutritious and tasty meal the entire family will love.
The healthy fish and potatoes go well together, however the zesty chorizo completes the scrumptious trio. There’s not enough chorizo in this dish to make it crazy spicy as there’s one link used for 4 servings and it provides a really great added layer of flavour.
We love this foil packet meal of baked fish fillets with zesty chorizo. I will often add some red bell peppers or shredded cabbage with the fish to completely round-out this dish into a hearty vegetable-packed meal. The Creamer potatoes and chorizo add such great flavour that these foil packets disappear quickly!

- 1.5 lbs (680 gr. / 1 package) Terrific Trio Creamer potatoes, cut into quarters
- 1 link (2 oz./60 gr.) chorizo sausage, casing removed and broken up into small pieces
- 1 tbsp olive oil
- 1/4 tsp fine sea salt
- 1/4 tsp ground black pepper
- 1 lbs (454 gr.) cod fillets, cut into 4 approximately equal pieces
- 1 tbsp lemon juice

Preheat oven to 425° F or grill/campfire to medium-high heat . Place 4 x 12" pieces of foil on a baking tray if using oven.

Toss quartered Creamer potatoes, chorizo pieces, oil, salt and pepper together in a large bowl. Divide evenly between foil pieces (about 1 1/4 cup per foil piece).

Fold edges up and over and pinch ends together to seal. Bake for 30 minutes or until potatoes are tender (prick with a sharp knife and potatoes should have some give).

Carefully remove and open foil packets (some steam will release). Top potatoes and chorizo with a cod fillet per foil packet. Bake for about 10 minutes or until cod is flakey and cooked through.

Drizzle lemon juice over cooked cod and potatoes. Serve immediately.
