Easter Rice Krispie Squares

These Mini Egg Rice Krispie Squares are the easiest Easter treats! 4 ingredients and 20 minutes is all it takes to whip up a batch these of fun and festive treats.

It’s that time of year where my shopping cart has to avoid all the aisles with Easter candies in them. Mini Eggs, Creme Eggs, or even the Caramilk Eggs … I’ve resisted temptation this year besides these outstanding Easter Rice Krispie Treats.

They have only 4 ingredients and are so quick to make that you’re likely to make them for everything Easter related from potlucks to school parties.

Mini Egg Rice Krispie Squares

Mini Eggs are one of my ultimate indulgences, and yet somehow they get tastier in these squares. Kids and adults will go bananas for them as they are highly addictive and challenging to resist.

I topped mine with some fancy sprinkles which my girls adored, but is not necessary. It was solely for looks that felt festive and fun. The main flavour comes from the soft marshmallow, crispy rice cereal and crunchy chocolatey Mini Eggs. Teh texture is so satisfying and delicious.

I like that this recipe uses up a bunch of Mini Eggs. There’s nothing worse than having copious amounts of holiday treats around. We’re still working on Christmas chocolate in this house – I finally gave up and froze it for cookies. A decision my future self will thank me for I’m sure. Maybe I should add some big chocolate pieces to more Rice Krispie Squares since my kiddos are so into them (I think because they don’t get treats like these very often).

We’re loading up on the family activities this Easter. A big hunt in the yard with lots of friends and neighbours as well as a big “family” dinner to include any friends who might not have family in town. I did grab some smaller LEGO to gift my kids and as I decided to cut back on the amount of treats they’re getting. It’s mostly ending up in my belly which is equally good and bad! 😉

What are your traditional Easter plans? Do you have any?

Course: Dessert
Cuisine: American
Keyword: easter treats, easy easter dessert, easy easter recipe, mini egg recipe
Servings: 16 squares
Author: Samantha
Ingredients
  • 300 grams (1 bag) mini marshmallows
  • 2 tbsp coconut oil or unsalted butter
  • 5 cups Rice Krispies cereal
  • 2 cups Cadbury Mini Eggs
US Customary - Metric
Instructions
  1. Grease and line a 9" x 13" pan with parchment paper.

  2. Using a double broiler* place marshmallows and coconut oil (or butter) in a large heat proof bowl with water simmering over medium low heat.

  3. Once melted add Rice Krispies cereal and mix until well blended. Add Mini Eggs and mix again. Add to prepared pan and press down firmly to flatten ( I find spraying the bottom of a 1 cup measuring tool is the easiest way to flatten rice krispies into the pan).

  4. Allow to set for 60 minutes (or more) and cut into desired sized squares.

Enjoy! xo

Who’s still playing catch up on last week like m Who’s still playing catch up on last week like me 🙈🤷🏻‍♀️ I’m going to get a head start on meal planning this week and I’ve got my eye on One Pan Meals that my kids like as much as I do.

Here are 4 easy sheet pan meals that are wholesome, don’t have crazy or too many ingredients, and are hands-off (more time catching up with life and less time in the kitchen). Plus, one pan so minimal dishes.

Pork Carnitas Burrito Bowls (or turn into tacos li Pork Carnitas Burrito Bowls (or turn into tacos like we often do) are by far my kids favourite meal and one where I don’t have to make a ton of different options. I mean, less work for a dinner with less whining? I’ll take it!

The 🍍 salsa is not to be missed. Tropical fruit is coming into season friends! A great time to switch up the usual for thrifty buys and satisfied tummies 😋

These Banana Buckwheat Donuts are happening this week for school lunches. Kids dig them. I dig them. Done deal. I just need a hot 30 min to make them happen.

A friend also turned the recipe into a loaf so there are options out there if you don’t have a donut 🍩 pan.

This 4-Ingredient Green Smoothie gets a bucket loa This 4-Ingredient Green Smoothie gets a bucket load of spinach into our diets before we leave the house for school and work. It's one of my long time smoothies that I make for my kids.

We've had it a few days in a row now to help us hit reset in the new year.

The omega oil is optional and I sometimes switch out the banana for a navel orange for a different flavour profile. Oh and if you're an Orange Julius fan, try a 1/2 tsp of vanilla extract - you won't regret it!
