It’s that time of year where my shopping cart has to avoid all the aisles with Easter candies in them. Mini Eggs, Creme Eggs, or even the Caramilk Eggs … I’ve resisted temptation this year besides these outstanding Easter Rice Krispie Treats. 

They have only 4 ingredients and are so quick to make that you’re likely to make them for everything Easter related from potlucks to school parties. 

Mini Egg Rice Krispie Squares

Mini Eggs are one of my ultimate indulgences, and yet somehow they get tastier in these squares. Kids and adults will go bananas for them as they are highly addictive and challenging to resist. 

Ingredient prep for Easter Rice Krispie Treats

I topped mine with some fancy sprinkles which my girls adored, but is not necessary. It was solely for looks that felt festive and fun.

The main flavour comes from the soft marshmallow, crispy rice cereal and crunchy chocolatey Mini Eggs. The texture is so satisfying and delicious.

I like that this recipe uses up a bunch of Mini Eggs. There’s nothing worse than having copious amounts of holiday treats around.

We’re still working on Christmas chocolate in this house – I finally gave up and froze it for cookies. A decision my future self will thank me for I’m sure.

Maybe I should add some big chocolate pieces to more Rice Krispie Squares since my kiddos are so into them (I think because they don’t get treats like these very often).

We’re loading up on the family activities this Easter. A big hunt in the yard with lots of friends and neighbours as well as a big “family” dinner to include any friends who might not have family in town.

I did grab some smaller LEGO to gift my kids and as I decided to cut back on the amount of treats they’re getting. It’s mostly ending up in my belly which is equally good and bad! 😉

Ingredients
  • 300 grams mini marshmallows 1 bag
  • 2 tbsp coconut oil or unsalted butter
  • 5 cups Rice Krispies cereal
  • 2 cups Cadbury Mini Eggs
US Customary – Metric
Instructions
  1. Grease and line a 9″ x 13″ pan with parchment paper. 

  2. Using a double boil method* place marshmallows and coconut oil (or butter) in a large heat proof bowl with water simmering over medium low heat. 

  3. Once melted add Rice Krispies cereal and mix until well blended. Add Mini Eggs and mix again. Add to prepared pan and press down firmly to flatten ( I find spraying the bottom of a 1 cup measuring tool is the easiest way to flatten rice krispies into the pan). 

  4. Allow to set for 60 minutes (or more) and cut into desired sized squares. 

Recipe Notes

*  double boil method means that a heatproof bowl sets on top of a pan with 1-2″ of simmering water (the bowl never touches the water).
