Eggs! In tacos! How had I not figured this out before? These Breakfast Tacos are our new favourite meal that can cross into lunch and dinner to be put to tasty use at any time of the day …. Breakfast, lunch, or the fastest and most satisfying dinner. I feel like I’ve been missing out on an efficient way to feed and satisfy my family (who says no tacos?!).
While we often enjoy eggs for a wholesome breakfast, we often add eggs to other meals to boost nutrition and round out many other dishes like salads, noodles and more.
We keep eggs stocked in our fridge for that added flexibility of adding on more sustenance, but at the end of the day, eggs are a very affordable protein that delivers on nutrition.
These Breakfast Tacos became so popular in our home as we could all customize the toppings. Picky eaters take a load off! Or at least they did when I served these scrambled egg tacos because everyone got to pick their favourite toppings and still fit in a nourishing meal.
I like serving these types of personalized egg meals for my kids as all the toppings they pile on are vegetables. I have a tomato loving girl who loads up on fresh salsa and scrambled eggs. Another girl who’s a massive guacamole fan (and if you make your own guacamole with avocados, cilantro, garlic, and lime juice it’s a pretty healthy topping). Everything balances out, but at least I know they’re all getting a source of high-quality protein from eggs.
Scrambled eggs are one of my favourites dishes to make with my young kids. They love all the whisking and mixing they get to help with. The inclusion of helping prepare a meal gives them a great sense of pride that I love watching unfold as we get any meal rolling.
I find that I lean on scrambled eggs as they’re quick and easy (obviously), but they also take to so many flavours that they can transcend being put into the breakfast box. I often add herbs to our scrambled eggs for a switch up and to compliment whatever else we’re eating.
My one pro-tip for scrambled eggs is to make sure they are seasoned with a pinch of salt. This small but mighty addition brings out great flavour.

- 8 large eggs
- 1 tbsp unsalted butter
- 2 links chorizo sausage, casing removed approx. 200 grams
- 1/2 tsp salt
- 8 small flour or corn tortillas
- 1/2 pint cherry tomatoes, halved
- 1/4 small red onion, finely chopped
- 2 tbsp chopped fresh cilantro leaves
- 1 tbsp lime juice from 1/2 lime
- 1/4 cup guacamole
- 1/4 small cabbage, thinly sliced
- 1/4 cup sour cream if desired
- 1/4 cup grated jack cheese or crumbled feta if desired

Cook chorizo over medium heat for 5-7 minutes, breaking meat with a wooden spoon, until meat is crumbled, crispy and cooked through.

Meanwhile, crack eggs into a medium bowl and whisk with salt until yolks are blended through.

Heat a medium sauce pan to medium heat. Add butter and allow to melt. Add whisked eggs and cook for 7-10 minutes, whisk or stir using a small fork every 1-2 minutes until eggs are starting to lump, but remain a touch runny, for approximately 10 minutes. The eggs will firm up quickly.

In a small bowl, mix together tomatoes, onion, cilantro, salt, and lime juice.

On a flour tortilla add eggs, crumbled chorizo, salsa and additional garnishes if desired.
