Oh hey there. You’re looking good. I’m back with a strong attempt to get back into the swing of things with a Spring post for you all. I started on a mission quite some time ago for some strawberry rhubarb bars, but the original recipe called for a heck of a lot of sugar and so much butter.

Don’t get me wrong. I’m a huge sugar and butter fan (toast has no place in my life without butter!), but at some point I can’t give my family a snack with copious amounts of butter and sugar regularly. This makes a substantial slab of wholesome bars so if we’re going to enjoy it for a number of days something’s gotta give.

Packed with #wholesome oats and fruit. #Sugarfree and #dairyfree too!I replaced the butter with coconut oil which lends an overall coconut flavour to the bars, but it’s not completely overpowering or in your face. The Strawberry Rhubarb combo is exactly what I need on a Spring day.

Bright, beautiful colouring, and the kids love them, making it a treat for me too. Any thing made from wholesome grains and fruit that my kids love gets my attention and time.

I did a little pattern on the top of these Strawberry Rhubarb bars, which is great for photos and looks quite pretty, however is completely unnecessary.

If you’d like to mimic the pattern have an extra rhubarb stalk and 4 extra strawberries. Finely slice both the rhubarb and strawberries lengthwise, then decorate away!

Looking for other kid-friendly healthy snacks?

My family still loves these Healthy Creamsicles and these Banana Buckwheat Doughnuts (who ever thought doughnuts could be healthy?!) and these very Spring focused Sugar Snaps with Mint and Whipped Ricotta to dip the vegetables into. My kids are all about the dipping action.

Happy Spring friends! You made it! Hurrah!

Ingredients
Strawberry Rhubarb Topping:
  • 2 cups roughly chopped rhubarb
  • 2 cups quartered and hulled fresh strawberries or frozen strawberries will work too
  • 2 tbsp honey
  • 1 tbsp lemon juice
Oat Crust:
  • 1.5 cups quick cooking oats
  • 1 cup spelt flour*
  • 1/2 cup solid coconut oil**
  • 2 tbsp honey***
US Customary - Metric
Instructions
Topping:
  1. Place a medium sauce pan over medium heat with rhubarb pieces, strawberry pieces, and honey. Cook, stirring occasionally for 15-20 minutes or until rhubarb and strawberries have become tender. Remove from heat, mix in lemon juice, and set aside.

Bars:
  1. Meanwhile, grease a 9" x 13" baking pan. Preheat oven to 350° F.

  2. Mix together oats, flour and coconut oil until a crumb like texture forms (I found using my hands to this created the best result). Press mixture firmly into greased pan.

  3. Top oat mixture in pan with strawberry rhubarb mixture.Bake for 25-30 minutes. Allow to cool slightly in pan if serving immediately.

  4. Bars will keep for 3-5 days tightly wrapped in refrigerator.

Recipe Notes

*  You can replace the spelt flour with all-purpose flour or whole wheat if desired.

** You can replace the coconut oil with unsalted butter

*** You can use up to 4 tbsp of honey here. One of my littles does not like overly sweet items so I only use 2 tbsp.

We didn't see the solar eclipse today, but we had a chance to make and sample these bars. They are extremely simple and delicious! My 10 year old and 1 year old came back for more. I used garbanzo bean flour and it tasted great. I love that there is no processed sugar.

Amazing news! Thank you so much for taking the time to let me know you enjoyed them. I love the no refined sugar aspect too; it's so enjoyable having a guilt-free snack. I'll have to give them a try with garbanzo bean flour. :)

It’s Robbie Burns Day tomorrow and I’d love to It’s Robbie Burns Day tomorrow and I’d love to know if anyone is making anything special for it? While I won’t be making Hagis, I am quite likely to put a pot of Scottish Mince on. And if there’s mince, there will most definitely be mash (aka tatties) too.

This Mince and Tatties recipe takes me back to my Nana’s kitchen or to one of my many trips to Scotland as a child, watching my Great Aunts make a comforting and delicious mince meal. Memories 💕

Who’s still playing catch up on last week like m Who’s still playing catch up on last week like me 🙈🤷🏻‍♀️ I’m going to get a head start on meal planning this week and I’ve got my eye on One Pan Meals that my kids like as much as I do.

Here are 4 easy sheet pan meals that are wholesome, don’t have crazy or too many ingredients, and are hands-off (more time catching up with life and less time in the kitchen). Plus, one pan so minimal dishes.

Pork Carnitas Burrito Bowls (or turn into tacos li Pork Carnitas Burrito Bowls (or turn into tacos like we often do) are by far my kids favourite meal and one where I don’t have to make a ton of different options. I mean, less work for a dinner with less whining? I’ll take it!

The 🍍 salsa is not to be missed. Tropical fruit is coming into season friends! A great time to switch up the usual for thrifty buys and satisfied tummies 😋

These Banana Buckwheat Donuts are happening this week for school lunches. Kids dig them. I dig them. Done deal. I just need a hot 30 min to make them happen.

A friend also turned the recipe into a loaf so there are options out there if you don’t have a donut 🍩 pan.

This 4-Ingredient Green Smoothie gets a bucket loa This 4-Ingredient Green Smoothie gets a bucket load of spinach into our diets before we leave the house for school and work. It's one of my long time smoothies that I make for my kids.

We've had it a few days in a row now to help us hit reset in the new year.

The omega oil is optional and I sometimes switch out the banana for a navel orange for a different flavour profile. Oh and if you're an Orange Julius fan, try a 1/2 tsp of vanilla extract - you won't regret it!
