Fresh, speedy, and full of flavour, this Hummus Flatbread is sure to become a new family favourite!
The days are slowly shifting from warm and long to cool and short. Last night we hosted what will most likely be our last dinner party on the patio.
We stayed up too late with good friends, eating simple food, wrapped in blankets, candles lit, playing board games, laughing into the night.
It’s amazing (and awesome) how quickly Cards Against Humanity gets inappropriate. We ate well, lots of flavours and choices, but simple. Much like this Hummus Flatbread.
I love hosting parties where I can grab fresh and lovely produce and turn it into something more using very basic (pantry) ingredients. This flatbread is just that.
This lettuce didn’t need much to make it shine. I drizzled the top with red wine vinegar, olive oil, and a little salt and pepper.
Last night I really wanted to have a dinner that promoted slower living. I’ve been feeling rushed constantly.
More chatting over supper, slowing down to truly hear what others are saying, and enjoying the company of friends that we don’t get to see often enough.

I will often make hummus to top these flatbreads. I still love this Lemon Basil Hummus, and last night I tried this Red Lentil Hummus that got rave reviews from friends (really creamy and great texture).
My kids all love hummus and making a fun “pizza” that combines their favourite foods like hummus and salad make this a dish we’ll be enjoying for a really long time.
- 2 x store-bought flatbread
- 1 x Inspired Greens Living Lettuce such as Multileaf Trio or Romain Trio, torn into bite size pieces
- 1 cup hummus either store-bought or homemade like the recipe in notes below*
- 1/2 pint / 200 grams cherry or small tomatoes halved
- 1/4 red onion very thinly sliced
- 2 tbsp fresh mixed herbs such as basil, dill, cilantro, mint, etc., optional
- red wine vinegar to drizzle
- olive oil to drizzle
- salt and pepper to season

Preheat oven to 350°F. Heat flatbreads for 5-7 minutes or until warm through and slightly browned.

Top flatbreads with 1/2 cup hummus each, Inspired Greens Lettuce, tomatoes, red onion, and fresh herbs (if using).

Drizzle the top with red wine vinegar, olive oil, and season very lightly with salt and pepper.
