Meyer Lemon and Rosemary Tom Collins is a refreshing seasonal recipe that has a hint of rosemary and the bright taste of Meyer Lemon.

Anyone else got strong love for Meyer Lemons this time of year? Or rosemary for that matter? I love the subtle hint of rosemary that shines through in this Meyer Lemon and Rosemary Tom Collins. The rosemary pairs nicely with the gin and the Meyer Lemon gives that bright citrus flavour that we all love in a Tom Collins.

And this week I need a cocktail BAD. 3 sick kids means I’m completely out of the swing of daily life and work. I barely have time to shower let alone get much else done. One of these cocktails is sure to ease the pain … even just a bit. It’s mid-week, but I can’t wait for Friday!

This cocktail is seasonal and festive without being too Christmasy. Not like this Easy Bourbon Eggnog I posted recently, which I adore, but it is a very Christmasy. I do want to see more of these Blood Orange Mimosas this year. I’m hoping I can juice enough blood oranges for a party soon.

Not interested in cocktails, but love Meyer Lemons? Try this Lazy Girl’s Meyer Lemon Tart. These bars also look super dreamy. Meyer Lemons have a great flavour that’s a cross between lemon and oranges. They’re just sweet enough.

Instagram post 2192633724077049221_1322016599 Make entertaining this holiday season a breeze AND delicious. I've partnered with @HighLinerCanada to come up with a scrumptious yet easy appetizer to rock your holiday party.
I used @highlinercanada 's Haddock Bites with crispy salt & vinegar potato slices, a drop of tartar sauce, some fresh dill, and of course the party "must-have" a gherkin - plus, it's fun to say gherkin too :) And I'm not going to lie, we totally ate these for dinner and they were amazing. Like a mini fish and chips in bit sized format. So good and my kids finished the tray ... a really fun way to mix up dinner. Like our own personal appetizer party.
Grab a box of @highlinercanada seafood this holiday season for all your entertaining needs (I'm pretty sure my kids are going to demand these Haddock Bites on all our party menus this season!). #HighLiner #SeafoodIsBetter #sponsored #seafood #holidayparty #appetizer #christmasparty #partyfood #fishandchips #gherkin

Recipe:
Serves 6

Ingredients:

8 eggs
1 cup cream
1 cup milk
2 tsp olive oil
1 whole small head of cauliflower, chopped into small pieces (about 1-1.5 lbs)
1/4 cup water
115 grams goat’s cheese (chèvre), crumbled into large chunks
salt and pepper

1 cup chopped chives
zest from 1 lemon
2 tsp olive oil
salt and pepper

Directions:

Preheat oven to 350°F.

Heat olive oil in a 10″ oven proof skillet (I used cast iron) over medium-high heat. Add cauliflower and water. Cook for 5-10 minutes until cauliflower has softened. Drain and season with salt and pepper.

Meanwhile, whisk eggs, cream and milk together in a large bowl. Add to softened cauliflower. Quickly top with chunks of goat’s cheese, remove from heat and place in oven.

Bake for 25-30 minutes until eggs have just set in the centre. Allow to rest for 5-10 minutes before serving.

For the gremolata, mix chives, lemon zest, and olive oil together in a small bowl. Lightly season with salt and pepper.

To serve, top frittata slices with chive gremolata.
