Meyer Lemon and Rosemary Tom Collins is a refreshing seasonal recipe that has a hint of rosemary and the bright taste of Meyer Lemon.
Anyone else got strong love for Meyer Lemons this time of year? Or rosemary for that matter? I love the subtle hint of rosemary that shines through in this Meyer Lemon and Rosemary Tom Collins. The rosemary pairs nicely with the gin and the Meyer Lemon gives that bright citrus flavour that we all love in a Tom Collins.
And this week I need a cocktail BAD. 3 sick kids means I’m completely out of the swing of daily life and work. I barely have time to shower let alone get much else done. One of these cocktails is sure to ease the pain … even just a bit. It’s mid-week, but I can’t wait for Friday!
This cocktail is seasonal and festive without being too Christmasy. Not like this Easy Bourbon Eggnog I posted recently, which I adore, but it is a very Christmasy. I do want to see more of these Blood Orange Mimosas this year. I’m hoping I can juice enough blood oranges for a party soon.
Not interested in cocktails, but love Meyer Lemons? Try this Lazy Girl’s Meyer Lemon Tart. These bars also look super dreamy. Meyer Lemons have a great flavour that’s a cross between lemon and oranges. They’re just sweet enough.
A refreshing seasonally inspired Tom Collins, with bright Meyer Lemon flavour with a hint of rosemary.
- 3 oz Meyer Lemons, juiced peel some rind with a vegetable peeler for garnish
- 1 oz lemons, juiced
- 3 oz gin
- 1 330 ml can Club Soda divided
- 1 oz rosemary simple syrup
- 2 sprigs rosemary sprigs (about 4" long each)
- 1 cup sugar
- 1 cup water

Place rosemary, sugar, and water in a small saucepan. Bring to a strong simmer, reduce heat, and cook for 5-10 minutes or until sugar has dissolved. Remove from heat and let cool.

Once cooled, drain with a sieve into a glass or other heatproof jar and use immediately or cover and place in refrigerator for 1-2 weeks.

Combine Meyer Lemon juice, lemon juice, gin, and rosemary simple syrup in a shaker with ice. Shake for 30 seconds and pour evenly into 2 tall glasses filled with ice. Top with club soda and garnish with Meyer Lemon peel if desired.
* there will be ample simple syrup leftover for many rounds of this cocktail 🙂
