With only 3 ingredients, these Mini Apple Pies are a winning easy dessert recipe. They come together in under 30 minutes, but still have the look of a made from scratch dessert. A crumbly festive gingersnap cookie crust and a fruit forward apple pie filling give the impression of Martha in the making, but they’re truly a breeze to whip up.

Ice cream or whipping cream is mandatory in my opinion. I mean what’s a delicious fruit pie without the creamy topping to bring on all familiar holiday feels? We love the way the apple pie filling shines through in this modern take of a classic apple pie.

Did I mention these are no bake? A short trip to the fridge is all these Mini Apple Pies require to bind up the crust.

A gingersnap crust is one of my favourite things. If you’re not a huge apple pie fan, the crust here would be dreamy with E.D.SMITH’s Pumpkin Pie Filling as well. Having a timeless easy pie crust is a great hack for uncomplicated entertaining. The options are endless for this festive pie crust.

How do you make a small pie?

Making a small pie is easy when you use a standard sized muffin tin for measurements. The muffin tin holds the crust in well until it binds for easy addition of pie filling. No need to run out and buy speciality pans!

Can you freeze apple pie?

Yes! And these Mini Apples Pies handle the freezer wonderfully. Make up to a few months in advance and simply let thaw overnight in the fridge.

Traditional apple pie can also be frozen, either from the unbaked stage or the baked stage.

I went through many rounds of recipe testing for lots of different personal failure reasons (one of those weeks around here!), but this recipe was a clear winner for easy holiday entertaining.

In my recipe testing I also made these Mini Apple Pies extra mini by using a mini muffin tin. They were a great one bite dessert that I might put out for a casual holiday mingle type of party. They’re currently chilling in the freezer for the holiday season ahead.

These Mini Apple Pies are 3 ingredients, no bake, and come together in under 30 minutes! Make dessert effortless and delicious with these Mini Apple Pies.

Ingredients
  • 2 500 ml (1,000 ml total) E.D.SMITH Apple Pie Filling cans
  • 10 tbsp unsalted butter
  • 3 cups crushed ginger thins cookies*
Instructions
  1. Spray a standard sized muffin tin with non-stick spray (12 spots).Slowly melt butter in microwave in short bursts, starting with 45 seconds and reducing to 20 second bursts until melted. 

  2. Crush ginger thins in a food processor or in a freezer bag smashing with a rolling pin or frying pan to crush the cookies. 

  3. Add melted butter to crushed cookies (I simply add the butter to the food processor and pulse a couple of times to avoid using another bowl). 

  4. Press 1/3 cup of crush cookie/butter mixture into each muffin spot, pushing the cookie mixture up the sides of the muffin tin. Place in fridge and chill for 10 minutes. 

  5. Add 1/4-1/3 cup of apple pie filling to each muffin cup. Chill until ready to serve. 

Recipe Notes

* I used Anna Ginger Thins and 3 cups equals 2 x 150 gr. packages. 

** The apple pie filling is used in this recipe uncooked. We shared these with many friends and colleagues without any issues or complaints, however, some may prefer these tarts baked. In which case, bake at 350° F for 25-30 minutes or until crust is golden brown and filling is bubbling.
