Fabulous ideas for Mother’s Day Brunch! From baked eggs to simple dishes the hubs can prepare, here are some inspiring recipes for brunch and a little bit more about me.

I don’t often share much about myself and my family on the blog, but when our marvellous babysitter took this photo (above) of us “ladies”, I thought I should divulge a bit more.

Being a mom of multiples is … challenging. As is being a mom of a singleton. That being said, there are days when I have two babies going through the same experiences (teething, growth spurt, toddler drama, etc.) hanging off me all. freaking. day. It’s difficult to do this with one baby, but with two; it’s a whole another (really hard) world. As I’m currently pregnant with a single baby (another girl – so excited!), I can already attest that this single baby gig is difficult, but WAY easier.

There are days that go by where I get nothing done besides taking a shower and simply maintain the status quo. When you have 2 needy babies each adult usually has to take one; there’s no passing off. This means no blogging, no cooking, no recipe research, no creative time to develop ideas, no time to eat or even think about a meal for myself.

This makes what I do on my own time lag behind this fast paced world we live in. And it’s taught me a very important lesson; I can only do so much. I can only be so many things. Right now my job is to be their mum, my husband’s wife, and your food blogger. Me in a nutshell when you thrown in the various activities I love to do (running, yoga, etc.).

If I want to foster the growth of my kids, their imagination, their ability to handle this world we live in, I want nothing more than to be the best mom I possibly can be. And that usually means, just getting by some weeks or even some months. The house is going to be dirty, there’s going to be grammatical and spelling errors on this blog (sorry), and I’m going to forget things. And, all of that is okay, because I get to be here when my kids experience gleeful joy and love (along with all the other not so wonderful bits).

One day I’ll have the time to foster the growth of this blog much more seriously, but for now I relish in the warmth of my family and the joy I get for cooking for them and sharing it all with you.

On the topic of all things mom; one week till Mother’s Day … eek! Feels so early this year. When we host Mother’s Day, it’s usually for a lot of moms; mom, aunties, close family friends, etc. all make an appearance so having some group menus in your arsenal is always a good thing. Here are my top 3 picks for Mother’s Day Brunch this year. And, I promise you won’t be disappointed with number one, it’s crazy easy and legit delish.

Mother’s Day Brunch Picks:

1) Shakshuka, My Kitchen Love. I’ve made this countless times and it’s always for a large group, it never disappoints.

2) Skillet-Baked Eggs with Spinach, Yogurt, and Chili Oil, Bon Appetit. Fast and on your table bursting with flavour for 25 minutes or less. Serve with some warm crusty baguette and your mom might love you just a bit more.

3) Baked Eggs en Cocotte with Basil, Food and Wine. A fancy title for oven baked eggs with basil. If you nail the timing, these are a perfect soft egg. I love dipping my toast soldiers into them. This recipe is also mostly hands off as the oven does all the cooking for you. You could go crazy and make bacon in the oven too if you really want to impress mom.
