This is an easy chicken recipe for dinner that can be simply served with lightly dressed greens and bread (or frozen fries if you’d prefer). Toss into a baguette for a saucy sandwich that’s loaded with chicken and hidden veggies.
Sneaky vegetables? You got it! I used my favourite Tomato Basil Sauce from The Soup Solution which already has a ton of vegetables in it, but I added some extra onion, carrot and garlic for that kick of vegetables that go virtually unnoticed.

This Pizza Chicken is an easy chicken recipe for dinner. Packed with vegetables and delicious pizza flavour, this cheesy topped chicken thigh recipe is a family favourite.
- 4-6 medium chicken thighs (skin on and bone in)
- 1 tsp kosher salt
- 1/2 tsp fresh ground black pepper
- 1 medium yellow (cooking) onion, finely chopped
- 1 medium carrot, finely chopped
- 3 medium garlic cloves, finely minced
- 500 ml tomato sauce
- 6 medium fresh basil leaves, chopped
- 100 grams bocconcini or fresh mozzarella, sliced

Heat a large heavy skillet (such as cast iron or stainless steel) with a lid over medium-high heat. Remove chicken from fridge and season with salt and pepper on both sides.

Place chicken skin side down and cook for 3-5 minutes or until skin is brown and starting to crisp. Flip and quickly brown the underside (the thighs are fully cooking here this part is to brown them).

Remove chicken and place on a plate. Immediately add onion and carrot to to pan, stirring occasionally for about 5 minutes.

Add garlic and stir for 1-2 minutes or until garlic is fragrant. Add tomato sauce and stir to combine. Bring to a boil and add chicken back to skillet. Cover and cook for 10-15 minutes or until chicken is cooked through.

Place cheese on top of each chicken thigh and cook until cheese is melted. (Alternatively, broil on high for 3-4 minutes until cheese is melted and browned)

Sprinkle basil over dish.
