Pizza Potato Packs are the ultimate campfire recipe with a wholesome potato base and topped with pizza flavours you won’t be able to resist. Grab this almost effortless foil pack meal that will become a new family favourite.

Pizza Potato Packs! Yup, a pizza flavour bomb ready to drop with only a handful of ingredients and all the usual pizza flavours we love. 

We’ve got a wholesome and nutritious base of baby potatoes, pizza sauce, cheese, pepperoni slices, green pepper, and some basil … seriously the easiest recipe to get flavours going every kid loves – pizza! And with a fibre and potassium loaded potato base I’m one happy momma.

These Pizza Potato Packs are a great foil packet dinner so we’ve also got minimal dishes. I love it when it’s flavours my family loves and I get off easy with hardly any dishes. 

Since The Little Potato Company Creamer potatoes have thin and delicious skin, the preparation for this foil packet meal is ultra quick with no washing or peeling required. It’s a true dump and cook recipe. I also used canned pizza sauce to simplify this campfire recipe (and my life) even more. 

I used Boomer Gold Creamer potatoes in this campfire dinner recipe, but any varietal would work.

How to speed up this foil packet recipe:

If you’re in a jam and need dinner on the table in less than 20 minutes you can precook the potatoes in the microwave.

They won’t be as saturated with the pizza sauce, but will eventually get coated in the sauce. Simply cook the whole potatoes on high for 4 minutes before continuing the recipe and only grill/bake for 15 minutes.

While I’m toting this recipe as a dream for a campfire dinner, I do think it’s a solid choice for a busy weeknight as well.

It’s a one pan wonder with flavours most kids can get onboard with, is fully loaded with wholesome vegetables, and made just slightly indulgent thanks to a couple of pieces of pepperoni and some cheese (where a little goes a long way). 

I wouldn’t complain if I arrived home after a day of work to this foil packet dinner that hits all the points for a healthy-ish comfort food meal we can enjoy as a family.

Cheesy Pizza Potato Packs that are perfect for camping or even busy weeknights with minimal prep, clean up and yet crazy good!

Ingredients
  • 1.5 lbs baby or creamer potatoes, any varietal, quartered
  • 1 cup pepperoni slices, about 4 small sticks
  • 1 medium green pepper, chopped (about 1.5 cups)
  • 14 oz. pizza sauce
  • 2 cups grated cheese (mozzarella and/or cheddar)
  • 2 tbsp chopped fresh basil leaves, or 2 tsp dried basil
US Customary – Metric
Instructions
  1. Preheat grill or oven to 425° F.

  2. Make 4 foil packs with 4 pieces of aluminum foil, about 1' x 1'.

  3. Divide potatoes*, pizza sauce (about 3 heaping tablespoons per pack), cheese, pepperoni, and basil between all 4 foil pack. Fold foil over to seal. Grill/bake for 20-25 minutes or until potatoes are fork tender and cooked through.

  4. If you're looking for browned and bubbling cheese, park the foil packs under a high broil for 1-2 minutes.
