Cheesy Pull Apart Bread!! It doesn’t take all day to make it! And it’s lactose-free making it a little easier on my one dairy-sensitive little.
I’ve packed some extra punch with some garlic powder and parsley, but this bread is basically the dreamiest cheesy garlic bread you’ve ever met.
I wanted to use a dependable soft bread recipe so I turned to my Rosemary Rocksalt Rolls and slightly adapted the recipe to make this gorgeous Pull Apart Cheese Bread.
The bread dough in this recipe is easy to use. It’s a relaxed dough that comes together with a bit of time, but not so much you wished you could do something else with your day.
The addition of using local Paradise Island Cheeses was an easy way to load up on some lactose-free cheeses. The Lactose-free Mozzarella gives the Pull Apart Bread the cheese pull everyone loves, and the Lactose-free Cheddar imparts the bold aged cheese flavour all us cheese-lovers crave for.

Variations / Substitutions:
- The Lactose-free Jalapeño Monterey Jack Cheese would be amazing for a spin on a traditional cheese bread. The Monterey Jack Cheese would give the bread the same cheese pull and add a delightful spicy note.
- If being Lactose-free isn’t a concern, this recipe can use regular Paradise Island Cheeses and regular milk.
- Trade parsley for thyme or rosemary for a wintery feel.
- Skip the garlic powder if you’re wanting to keep this cheese bread pure.

- 3/4 cup warm lactose-free milk (or regular milk)
- 2 tsp active yeast
- 1 tbsp sugar
- 4 tbsp unsalted butter, melted and cooled slightly
- 1 large egg
- 2 1/4 cup all-purpose flour
- 1 tsp sea salt
- 4 tbsp unsalted butter, room temperature
- 1/4-1/2 tsp garlic powder
- 2/3 cup grated Paradise Island Cheddar Cheese
- 1/3 cup grated Paradise Island Mozzarella Cheese
- 1 tbsp chopped fresh parsley
- 1/4 tsp sea salt

Mix sugar and yeast together in the bottom of a stand mixer fitted with the dough hook (or a large bowl) and pour warm milk over top. Cover with a tea towel and let sit for 5 minutes – until foamy on top.

With a mixer on low, add butter, egg, and salt. Slowly add flour 1/2 cup at a time.

Turn mixer to medium and knead for 5 minutes or until a shapely ball is formed by the dough. If the dough is too sticky or not forming a ball, slowly add flour 1-2 teaspoons at a time until a ball is formed (not adding more than 5-6 tsp).

Place dough in a lightly greased bowl, cover with a tea towel or plastic wrap and allow to rise for 45-60 minutes in a warm area of your kitchen (draft-free preferably).

Have grated cheese in a bowl nearby.

While dough is rising for the first time, using a fork in a small bowl, mix together butter, garlic powder, parsley, and salt salt.

Lightly spray or grease a 8" x 5" loaf pan.

Punch dough down to release most of the air and divide the dough into 12 equal pieces (divide in half, then each half into thirds and each third in half for a fairly equal division of dough).

Using your hands on a lightly floured surface, create a small roundish piece of dough for each of the 12 pieces of dough. Spread a small amount of mixed butter (about 1/2-1 tsp) and scatter both cheeses on top.

Fold each round in half (to make a half-moon shape) and place the flat side down in the bread pan, adding one folded cheese-filled piece after another until all 12 pieces of dough are filled with butter and cheese.

Cover and let rise again for 45-60 minutes.

Preheat oven to 350° F. Place bread in oven and allow to cook for 45-60 minutes or until cooked though and cheese on top is bubbly and golden brown. Check on bread at the 25/30 minute mark to see if the top is browning too quickly. If it is place some loose foil on top (trying to tent the foil so that the cheese does not stick to it).

Remove from oven and allow to cool for 5-10 minutes before serving.

In the unlikely event any leftovers remain, wrap tightly and refrigerate, reheat at 350° F for 15 minutes.
