Winning sheet pan dinner! This Sheet Pan Turkey, Creamer Potatoes and Brussels Sprouts is the real deal – packed with traditional holiday flavours. It is seriously the easiest Thanksgiving dinner you’ll ever make – I guess besides going to a restaurant and ordering Thanksgiving dinner there.

This simple Thanksgiving dinner is loaded up with wholesome turkey, The Little Potato Company‘s Creamer potatoes, and brussels sprouts. It was a massive hit with my family multiple times during the recipe testing phase and showed that one of my kids is a brussels sprouts fanatic (that’s my girl!!).

Sheet Pan Turkey and Potatoes

A Thanksgiving dinner for 4 (stretched to 5 with 3 littles in my house), that requires minimal prep and almost zero hands on time during the cooking process. This means that a nostalgic version of your holiday meal can be on the table quickly and almost effortlessly. Dreamy scene right?

The oven does 98% of the work and all that is required is adding the Little potatoes and brussels sprouts part way through the turkey’s cooking process. The Creamer potatoes come pre-washed and are equally sized so there’s no need to chop them up, they’re simply added to the sheet pan with the trimmed and halved Brussels Sprouts.

Easy Sheet Pan Turkey, Potatoes and Veg.

Can you cook turkey on a sheet pan? You bet you can! It’s so much easier cooking individual pieces of turkey on sheet pan vs what can be a cumbersome task of prepping and cooking a whole bird.

This easy Thanksgiving recipe uses the thigh and drumstick of the turkey, but a whole breast would work as well. If you can’t find the turkey pieces and want to substitute for chicken, reduce the cooking time of the turkey noted below. Turkey should always be cooked to 165° F (like chicken) and the Little potatoes should always be cooked until a sharp knife can easily pierce them (and I personally like it when they get a bit browned and crispy on the outside).

A lot of people ask me “what should I make for a small Thanksgiving dinner?”. I think this is fairly subjective, but I like this sheet pan turkey meal covers all the basics: turkey, Little potatoes, and a second seasonal vegetable. A handful of ingredients take this simple turkey meal and turn it into wow.

Rosemary was my herb of choice. I find it’s readily abundant and pairs perfectly with all the other ingredients (specifically the potatoes – so much yum!). Any additional rosemary can be parked around the meal to make it more festive and give off more fragrance.

More and more I’ve been leaning on easy nutrient dense ingredients that only need a slight encouragement to shine: turkey, Creamer potatoes, and Brussels Sprouts are all there. They are quickly tossed with fresh rosemary, olive oil, garlic, and salt and pepper. That’s all it takes to take them up to a level fitting enough for a special meal.

I actually loved this easy Thanksgiving dinner recipe so much and found it so convenient that we had for easy weeknight dinners a lot when school was kicking into high gear. Highlights for us were the extra crispy exterior of the little potatoes and brussels sprouts (sometimes it’s hard doing Thanksgiving when it’s still blazing hot out you guys).

The little potatoes remained fluffy and light on the interior with that nicely browned and crispy delicate thin skin (it’s naturally thin, meant to be eaten, and the fun
colours look so festive). I used The Little Potato Company’s Terrific Trio which is a blend of their red, yellow and blue Creamer potato varietals, however any varietal from The Little Potato Company will work well. Check out their Creamer potato products .

Ingredients
  • 1.5-2 lbs turkey thigh and drumstick
  • 1.5 lbs Creamer Potatoes by The Little Potato Company*
  • 2 cups brussels sprouts, trimmed and halved
  • 2 cloves garlic, minced
  • 3 sprigs fresh rosemary
  • 2 tbsp olive oil, divided
  • 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper
US Customary - Metric
Instructions
  1. Preheat oven to 425° F.

  2. Place turkey on a large rimmed baking sheet (around 9" x 13" will work). Drizzle with 1 tbsp of the olive oil and sprinkle with half the salt and half the pepper. Place in oven and bake for 15 minutes.

  3. Toss Creamer potatoes, brussels sprouts, rosemary, garlic, remaining 1 tbsp of olive oil, and remaining salt and pepper together. Add to turkey on baking sheet and return to oven, cooking for 20-25 more minutes or until turkey is cooked through (reaches 165°F) and vegetables are cooked, browned and starting to crisp up.

  4. Serve immediately.

* I used the Terrific Trio blend in this recipe, but any varietal from The Little Potato Company will be equally delicious.
