I’m sure you’ve all realized this by now, but I love salad. Not as a meal necessarily, but as a refreshing balance to any meal. This Herby Sweet Pepper and Onion Salad comes together quickly and can be made ahead of time. There’s not leafy greens that will wilt.
Are bell pepper healthy?
Very. They’re a major boost of vitamin C and fibre with very few calories. Be sure to use red, orange, and yellow peppers for healthy snacks as they pack more nutrition than their green counterparts.
This means not only is this salad extremely low calorie, but it’s packed with Vitamin C and fibre.

- 4 medium orange or yellow bell peppers, thinly sliced*
- 1/2 medium red onion, thinly sliced*
- 2 tbsp red wine vinegar
- 2 tbsp chopped fresh basil
- 2 tbsp chopped frech chives
- 2 tbsp chopped fresh flat-leaf parsley
- 2 tbsp chopped fresh mint
- 1 tbsp olive oil
- 2 pinches kosher salt
- 1/4 tsp fresh ground black pepper

Toss bell peppers, onion, and vinegar in a large bowl; season with salt and pepper to taste. Let sit until bell peppers are slightly softened, 10–20 minutes.

Just before serving, toss herbs and oil with bell pepper mixture.
* I find the fastest way to slice bell peppers or onions and keep the size consistent is by using a mandoline.
