Chocolate Brownie Cookies

These Chocolate Brownie Cookies are an easy one bowl cookie recipe that can be whipped and enjoyed in less than 30 minutes!

  • 3 cups icing sugar (powdered sugar)
  • 3/4 cup unsweetened cocoa powder
  • 1 tsp kosher salt
  • 2 large egg whites
  • 1 large egg
  • 4 ounces dark or bittersweet chocolate, roughly chopped
  • 3 tbsp cacao nibs, optional


  1. Preheat oven to 350° F and position two racks, one in the upper third of the oven and one in the lower third of the oven*.

  2. Whisk together sugar, cocoa powder, and salt in a large bowl. In the same bowl, add egg whites and eggs. Whisk until combined.

  3. Fold in chocolate and cacao nibs (if using).

  4. Drop by the tablespoon (actually use a tablespoon measuring device to get consistent sizes), spacing 2" apart on parchment lined baking trays. You'll most likely need to large trays.

  5. Bake for 14-16 minutes, rotating once at the halfway mark.

  6. Let cool on pan. The cookies will continue to firm up.

Recipe Notes

* ensure the pans are at room temperature or colder. If warm, the batter will thin out and cookies will burn.
