Coconut Lime Loaf

This Coconut Lime Loaf is a one bowl easy to prepare quick bread. Brighten up your day with this vibrant Coconut Lime Loaf!

Ingredients

  • 3 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 tsp lime zest
  • 3/4 cup coconut sugar (or sub with 1/4 cup granulated sugar and 1/2 cup brown sugar)
  • 1 large egg
  • 1 cup coconut milk
  • 1/4 cup fresh lime juice
  • 1 tsp vanilla extract
  • 2 tbsp coconut oil (or sub with canola or olive oil)

Instructions

  1. Grease a 9"x5" loaf pan and preheat oven to 350° F. 

  2. In a large bowl, whisk together flour, baking powder, salt, lime zest, and sugar. 

  3. Make a well in the middle of dry ingredients and add egg, coconut milk, lime juice, vanilla extract, and oil. Whisk wet ingredients together in a couple of strokes. Using a wooden spoon or a spatula, combine all ingredients in a couple of strokes. Some lumps are okay, batter should be barely blended. 

  4. Pour batter into prepared pan*. Bake for 50-55 minutes or until a toothpick (or cake tester) comes out clean). Cool for 15-20 minutes in pan, then fully cool on a rack.
