Ingredients

  • 3/4 cup cooked quinoa (approximately 1/4 cup uncooked)
  • 2 slices cooked bacon, finely chopped
  • 1 medium zucchini, trimmed and grated
  • 1/4 medium red bell pepper, finely chopped
  • 3 large eggs
  • 1/2 tsp kosher salt
  • 1/4 tsp ground pepper
  • 1/2 tsp garlic powder
  • 1/3 cup crumbled feta

Instructions

  1. Preheat oven to 350° F.

  2. Mix all ingredients together and spoon into a greased muffin tin (or use paper liners).

  3. Bake for 20-25 minutes, until the egg is firm. Remove from oven and allow to cool for 5 minutes before serving. 

Recipe Notes

Optional alternates for additions/toppings: 2 slices of chopped cooked ham or sausage, topped with pecans, Halloumi cheese, finely chopped broccoli, etc.
