Slow Cooker Peach Cobbler

Peach Base:

  • 8 cups sliced peaches (skin left on) approx. 8 medium sized peaches
  • 2 tbsp brown sugar
  • 1 medium lemon, zest and juice about 3-4 tbsp lemon juice and 2 tsp lemon zest

Cake Topping:

  • 1 1/2 cups all-purpose flour
  • 1 cup brown sugar
  • 2 tsp baking powder
  • 1 pinch kosher salt
  • 1/2 cup (1 stick) unsalted butter, melted
  • 3/4 cup milk (whole or 2% preferred)


Peach Base:

  1. Grease slow cooker with butter or spray with non-stick spray. 

  2. Gently toss sliced peaches, brown sugar, lemon zest, and lemon juice together and place in the bottom of a slow cooker. Gently move peaches around to create a somewhat even layer.

Cake Topping:

  1. In a large bowl, whisk together all-purpose flour, brown sugar, baking powder, and salt. Add melted butter and milk and mix quickly with a wooden spoon or spatula until smooth. 

  2. Pour cake mixture on top of peach layer and smooth, carefully covering peaches. Place a single layer of paper towel* under the lid of the slow cooker, pulling it taut.

  3. Cover with lid (and paper towel layer) and set slow cooker to low for 4-6 hours or high for 2.5-3.5 hours. 

  4. Carefully remove lid and serve with ice cream, cream, or yogurt.

* the layer of paper towel prevents the cake from becoming soggy during the cooking process.
