Easter Rice Krispie Squares

These Mini Egg Rice Krispie Squares are the easiest Easter treats! 4 ingredients and 20 minutes is all it takes to whip up a batch these of fun and festive treats.

  • 300 grams (1 bag) mini marshmallows
  • 2 tbsp coconut oil or unsalted butter
  • 5 cups Rice Krispies cereal
  • 2 cups Cadbury Mini Eggs


  1. Grease and line a 9" x 13" pan with parchment paper. 

  2. Using a double broil method* place marshmallows and coconut oil (or butter) in a large heat proof bowl with water simmering over medium low heat. 

  3. Once melted add Rice Krispies cereal and mix until well blended. Add Mini Eggs and mix again. Add to prepared pan and press down firmly to flatten ( I find spraying the bottom of a 1 cup measuring tool is the easiest way to flatten rice krispies into the pan). 

  4. Allow to set for 60 minutes (or more) and cut into desired sized squares. 

Recipe Notes

*  double broil method means that a heatproof bowl sets on top of a pan with 1-2" of simmering water (the bowl never touches the water).
