  • 1.5-2 lbs turkey thigh and drumstick
  • 1.5 lbs Creamer Potatoes by The Little Potato Company*
  • 2 cups brussels sprouts, trimmed and halved
  • 2 cloves garlic, minced
  • 3 sprigs fresh rosemary
  • 2 tbsp olive oil, divided
  • 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper


  1. Preheat oven to 425° F.

  2. Place turkey on a large rimmed baking sheet (around 9" x 13" will work). Drizzle with 1 tbsp of the olive oil and sprinkle with half the salt and half the pepper. Place in oven and bake for 15 minutes.

  3. Toss Creamer potatoes, brussels sprouts, rosemary, garlic, remaining 1 tbsp of olive oil, and remaining salt and pepper together. Add to turkey on baking sheet and return to oven, cooking for 20-25 more minutes or until turkey is cooked through (reaches 165°F) and vegetables are cooked, browned and starting to crisp up.

  4. Serve immediately.

* I used the Terrific Trio blend in this recipe, but any varietal from The Little Potato Company will be equally delicious.
