Classic BLT gets a delicious spin with this BLT Rice Bowl recipe with a creamy (dairy-free) Avocado Lime Dressing.
Prepare rice as per package instructions. Set aside.
Cook bacon in a medium skillet over medium-high heat until browned and crispy, stirring occasionally for about 5 minutes. Remove from pan and drain on paper towel. Set aside
Place avocado, cilantro, lime juice, olive oil, cumin, chili powder, and salt in a blender. Mix on high until smooth.
Serve rice with bacon, lettuce, tomatoes and the dressing on the side.
* or previously cooked rice equal to 5-6 cups cooked. I've used both white and short grain brown rice to great success.
