  • 500 grams boneless skinless chicken thighs, sliced into bite sized pieces OR 2 boneless skinless chicken breasts
  • 2 cups basmati rice, well rinsed
  • 2 1/2 cups chicken broth
  • 3 cloves garlic, minced
  • 2 tsp dried oregano or 2 tbsp fresh chopped oregano
  • 1 small lemon, juice and zest
  • 1/2 tsp fine sea salt


  1. Add chicken, rice, chicken broth, garlic, oregano, lemon juice and zest, and salt to Instant Pot*.

  2. Place lid on Instant Pot with the steam release handle set to sealing and cook at HIGH pressure for 4 minutes.

  3. Allow Instant Pot to naturally release (wait for float valve to decompress naturally), carefully open lid and fluff rice.

  4. Top with more lemon juice, zest and salt if desired.
