One Pot Tex-Mex Rice

One Pot 15 minute Tex-Mex Rice for a #WeekdayWin

Ingredients

  • 1 1/3 cup Minute Brown Rice
  • 1 lbs 554 grams extra-lean ground beef
  • 1 x 330 mL/13 oz black beans drained and rinsed
  • 1 cup corn fresh, canned or frozen
  • 2 tbsp taco seasoning*
  • 1 cup chopped fresh tomatoes
  • Optional Garnishes: chopped fresh cilantro leaves red bell pepper slices, avocado slices, sour cream or plain Greek yogurt

Instructions

  1. In a large skillet over medium-hight heat, brown meat until browning, about 5 minutes.
  2. Add taco seasoning and rice, mix well to fully coat rice and meat with seasoning.
  3. Add 1 cup of water, bring to a boil. Reduce heat and simmer for 5 minutes.
  4. Add beans and corn and cook for 2-3 minutes or until beans and corn are warmed through.
  5. Top with tomatoes and serve alongside any desired garnishes.

Recipe Notes

* Taco Seasoning - if you don't have any taco seasoning mixture here's my version that's easy to whip up: 1 tbsp chilli powder, 1 tsp cumin, 1 tsp paprika (I use hot, but sweet will work as well), 1 tsp Kosher salt, 1/2 tsp garlic powder, and 1/2 tsp dried oregano

** Dish keeps well in fridge, making any leftovers an excellent lunch.
