Ingredients

  • 1 x 156 grams 1 container Tiny Tummies "Jack's Sneaky Spinach Blend"
  • 1 cup milk
  • 1 egg
  • 1 1/4 cup all-purpose flour preferably organic
  • 2 tsp baking powder
  • 1 tsp coconut oil or other vegetable oil

Instructions

  1. In a large bowl whisk together Tiny Tummies "Jack's Sneaky Spinach Blend", milk, and egg. Sift flour and baking powder over top of liquid mixture.
  2. Preheat coconut oil* in a large skillet over medium heat.
  3. Using 1/4 cup measuring cup, scoop batter and cook in skillet, about 3-5 minutes per side or until the pancakes start to puff up and bubbles appear.
  4. Serve plain or with blueberry syrup (take one cup of blueberries and slightly smash with 2-4 tbsp of maple syrup).

Recipe Notes

*coconut oil should be used up to 350° F for cooking purposes. In this recipe I really liked the additional flavour it provided the pancakes. If you're concerned about the level of heat please use another vegetable oil instead (such as canola or grapeseed oil).
