Oven Baked Eggs in Buns

Ingredients

Oven Baked Eggs in Buns:

  • 4 medium dinner buns or rolls French buns, or smaller sourdough or potato rolls work well)
  • 4 large eggs
  • 1 pinch fine sea salt
  • 1 pinch ground black pepper

Suggested sides & garnishes:

  • 1 cup strawberries halved or left whole
  • 1 cup blueberries or raspberries left whole
  • 5-8 medium steamed asparagus
  • 1-2 medium mangoes halved and carefully cut criss-cross
  • 1-2 medium grapefruits halved
  • 1 medium navel orange sliced

Instructions

  1. Preheat oven to 400° F and line a baking sheet with parchment paper.

  2. Cut out a hole in the top of each bun large enough to fit a cracked-egg. (Be sure to the leave the crust of bun intact so the white doesn't leak out. Use bread that's been removed from the buns for another purpose such as panzanella salad or breadcrumbs). Crack an egg into each hole. Season lightly with salt and pepper.

  3. Bake for 15-20 minutes and serve immediately.

  4. Serve with suggested garnishes and sides if desired.
