Broiled Salmon, Herbed Couscous and Salad

Ingredients

  • 1 lbs salmon, skin on (or 4 fillets around 115 grams each)
  • 1 tsp lime zest
  • 1 tsp olive oil
  • 1 small shallot, finely chopped
  • 1 cup couscous (small quick cooking couscous, not Israeli Couscous)
  • 1 1/2 cups vegetable or chicken broth
  • 2 tbsp chopped cilantro
  • 1/2 pint cherry tomatoes, halved
  • 1/2 long English cucumber, sliced and cut into quarters
  • 1/2 large red bell pepper, thinly sliced
  • 1/4 small red onion, finely chopped
  • 1 drizzle red wine vinegar
  • 1 drizzle olive oil
  • 1/8 tsp dried oregano
  • 1/4 tsp fine sea salt
  • 1/4 tsp ground black pepper

Instructions

Salmon:

  1. Place oven rack 6" from broiler and preheat broiler to high.

    Place salmon on a rimmed baking sheet and sprinkle with lime zest. Broil for 6-10 minutes or until interior of salmon is extremely hot and salmon becomes flaky at the edges.

Couscous:

  1. Heat 1 tsp of olive oil over medium-high heat and cook shallots, stirring until starting to soften, about 2-3 minutes. Season with salt and pepper. Add couscous and broth. Bring to a boil and immediately cover and remove from heat. Fluff with a fork after 5 minutes and add chopped cilantro.

Salad:

  1. While couscous and salmon are cooking cut up all vegetables, toss together in a medium bowl and drizzle with vinegar, olive oil (no more than 1 tbsp for each of those) and add a dash of dried oregano (no more than 1/2 tsp). Season lightly with salt and pepper.
