Endive Beet Bites

Beautiful and easy to prepare Endive Beet Bites topped with walnut crumble and Caesar Dressing.

Ingredients

  • 2 medium beets tops trimmed
  • 1 bay leaf dried or fresh
  • 1/2 tsp salt
  • 3 heads of endive purple or green, OR Butter or IceBerg Lettuce, ends trimmed and separated into individual leaves
  • 1/4 cup crumbled walnuts roughly smash in a bag with a pan
  • 1/2 cup Litehouse Organic Caesar Dressing
  • Fresh herbs to garnish chives or dill, about 1 tbsp chopped

Instructions

  1. Place beets in a medium saucepan with bay leaf and salt. Cover with water and bring to a boil. Reduce heat to medium and cook at a strong simmer for 15-20 minutes or until beets are tender when poked with a fork. Remove from heat and drain. Once cooled enough to handle, remove skin by rubbing with paper towel or by using a vegetable peeler. Slice beets into thin wedges.
  2. Top each endive leaf with 2 slice of beets, walnut crumble, Caesar dressing, and fresh herbs.
