Beautiful and easy to prepare Endive Beet Bites topped with walnut crumble and Caesar Dressing.

Ingredients
2medium beetstops trimmed
1bay leafdried or fresh
1/2tspsalt
3heads of endivepurple or green, OR Butter or IceBerg Lettuce, ends trimmed and separated into individual leaves
1/4cupcrumbled walnutsroughly smash in a bag with a pan
1/2cupLitehouse Organic Caesar Dressing
Fresh herbs to garnishchives or dill, about 1 tbsp chopped
Instructions
Place beets in a medium saucepan with bay leaf and salt. Cover with water and bring to a boil. Reduce heat to medium and cook at a strong simmer for 15-20 minutes or until beets are tender when poked with a fork. Remove from heat and drain. Once cooled enough to handle, remove skin by rubbing with paper towel or by using a vegetable peeler. Slice beets into thin wedges.
Top each endive leaf with 2 slice of beets, walnut crumble, Caesar dressing, and fresh herbs.
