Mango Lemongrass Lettuce Wraps

Sweet sticky chicken with thin rice noodles and a mango salsa, all wrapped up in lettuce. Perfect healthy and delicious dinner!

Ingredients

Mango Lemongrass Chicken:

  • 8 small chicken thighs thinly sliced
  • 1/4 cup Mango or Orange Juice
  • 2 stalks lemongrass cut and only soft bottom portion retained, hard exterior and top portion can be discarded
  • 2 cloves garlic peeled
  • 1/3 cup cilantro leaves loosely packed
  • 1/4 cup coconut milk regular or low fat will work
  • 1 tbsp vegetable oil grapeseed, avocado, etc.
  • 1 tsp fine sea salt

Noddles:

  • 1 pkg vermicelli noodles

Lettuce:

  • 1 large head of lettuce bib, butter, or iceberg lettuce, leaves separated

Mango Salsa:

  • 2 ripe yellow mangos
  • 1/2 long English cucumber
  • 1/4 red onion peeled and chopped into small pieces.
  • 2 tbsp Mango or Orange Juice
  • 1 tbsp lime juice from approximately 1/2 lime
  • 1/4 tsp fine sea salt

Instructions

  1. Blend 1/4 cup of juice, lemongrass, garlic, cilantro, coconut milk, vegetable oil, and salt on high until liquified. Place contents in a glass container or a large freezer bag. Add chicken and mix until chicken is fully coated. Let marinade for 20 minutes to 8 hrs.

  2. Set a skillet to medium-high heat. Remove chicken from marinade using a slotted spoon and discard marinade. Cook chicken, stirring occasionally for 7-9 minutes. Chicken should begin to brown and get almost sticky.
  3. Meanwhile, cook vermicelli noodles as per package instructions and set aside.
  4. Meanwhile, remove skin from mangos and carefully chop into small cubes. Chop cucumber into a similar size. Add both mango and cucumber to a medium bowl. Add red onion, remaining juice, lime juice, and sea salt. Toss gently until combined.

  5. To assemble serve lettuce pieces, noodles, chicken, and salsa and build lettuce cups with layers of each.
