Roasted Sweet Potatoes with Chimichurri

Roasted Sweet Potatoes with Chimichurri is a vibrant and delicious side dish! Super healthy with baked sweet potato fries and herb packed chimichurri sauce.

Ingredients

Roasted Sweet Potatoes:

  • 4 small sweet potatoes, unpeeled, cut lengthwise into wedges
  • 2 tbsp olive oil
  • 1/2 tsp fine sea salt
  • 1/2 tsp fresh ground black pepper

Chimichurri Sauce:

  • 1/2 cup fresh cilantro leaves
  • 1/2 cup fresh flat-leaf (Italian) parsley
  • 1/4 cup fresh oregano leaves
  • 1 tbsp fresh thyme leaves, optional
  • 2 medium garlic cloves, peeled
  • 2-3 tbsp red wine vinegar*
  • 1/2 tsp fine sea salt
  • 1/2 tsp fresh ground black pepper

Instructions

Roasted Sweet Potatoes:

  1. Preheat oven to 425° F.

  2. Toss sweet potatoes and 2 tbsp of olive oil on a baking sheet. Season with salt and pepper. Bake for 25-30 minutes flipping once.

Chimichurri Sauce:

  1. Meanwhile, blend herbs, garlic and vinegar in a blender or food processor until chopped. With motor running slowly add remaining olive oil and process until combined. Season to taste with salt and pepper.

Assembly:

  1. Spoon chimichurri onto a plater and top with roasted sweet potatoes or serve alongside fries as a dip.
