Easy and quick to prepare Slow Cooker Peach Cobbler recipe! Packed with juicy, sweet peaches and has a spongy cake topping.
Grease slow cooker with butter or spray with non-stick spray.
Gently toss sliced peaches, brown sugar, lemon zest, and lemon juice together and place in the bottom of a slow cooker. Gently move peaches around to create a somewhat even layer.
In a large bowl, whisk together all-purpose flour, brown sugar, baking powder, and salt. Add melted butter and milk and mix quickly with a wooden spoon or spatula until smooth.
Pour cake mixture on top of peach layer and smooth, carefully covering peaches. Place a single layer of paper towel* under the lid of the slow cooker, pulling it taut.
Cover with lid (and paper towel layer) and set slow cooker to low for 4-6 hours or high for 2.5-3.5 hours.
Carefully remove lid and serve with ice cream, cream, or yogurt.
* the layer of paper towel prevents the cake from becoming soggy during the cooking process.
