Ingredients

  • 2 pears peeled and sliced
  • 3 tbsp unsalted butter divided
  • 2 tbsp brown sugar
  • 1 tbsp bourbon
  • 1 1/4 tsp vanilla divided into 1 tsp and 1/4 tsp
  • 3 large eggs
  • 3/4 cup whole milk
  • 3/4 cup all-purpose flour
  • 1/4 tsp kosher salt

Instructions

  1. Preheat oven to 425° F.
  2. Whisk eggs, milk, flour, 1 tsp vanilla and salt in a medium bowl until smooth. Set aside.
  3. Melt 1 tbsp butter in a 10" ovenproof skillet, preferably cast iron, over medium heat. Add pear slices, 1/4 tsp vanilla, bourbon, and brown sugar. Cook, tossing often, until pears are coated and have softened. About 5 minutes. Transfer to a plate.
  4. Carefully wipe out skillet and heat in oven until very hot (about 8-10 minutes). Carefully add remaining 2 tbsp of butter and tilt to cover bottom and sides of pan. Add pears to middle of pan and pour batter over. Bake until pancake is puffed and golden brown around the edges and centre is set, but still custardy, 12-15 minutes.
