Ingredients
2pearspeeled and sliced
3tbspunsalted butterdivided
2tbspbrown sugar
1tbspbourbon
1 1/4tspvanilladivided into 1 tsp and 1/4 tsp
3large eggs
3/4cupwhole milk
3/4cupall-purpose flour
1/4tspkosher salt
Instructions
Preheat oven to 425° F.
Whisk eggs, milk, flour, 1 tsp vanilla and salt in a medium bowl until smooth. Set aside.
Melt 1 tbsp butter in a 10" ovenproof skillet, preferably cast iron, over medium heat. Add pear slices, 1/4 tsp vanilla, bourbon, and brown sugar. Cook, tossing often, until pears are coated and have softened. About 5 minutes. Transfer to a plate.
Carefully wipe out skillet and heat in oven until very hot (about 8-10 minutes). Carefully add remaining 2 tbsp of butter and tilt to cover bottom and sides of pan. Add pears to middle of pan and pour batter over. Bake until pancake is puffed and golden brown around the edges and centre is set, but still custardy, 12-15 minutes.
