
This Coconut Lime Loaf is a one bowl easy to prepare quick bread. Brighten up your day with this vibrant Coconut Lime Loaf!
Grease a 9"x5" loaf pan and preheat oven to 350° F.
In a large bowl, whisk together flour, baking powder, salt, lime zest, and sugar.
Make a well in the middle of dry ingredients and add egg, coconut milk, lime juice, vanilla extract, and oil. Whisk wet ingredients together in a couple of strokes. Using a wooden spoon or a spatula, combine all ingredients in a couple of strokes. Some lumps are okay, batter should be barely blended.
Pour batter into prepared pan*. Bake for 50-55 minutes or until a toothpick (or cake tester) comes out clean). Cool for 15-20 minutes in pan, then fully cool on a rack.
* add additional lime zest and shredded coconut if desired.
