Hummus Flatbread
Fresh, speedy, and full of flavour, this Hummus Flatbread is sure to become a new family favourite!

x store-bought flatbread

x Inspired Greens Living Lettuce
such as Multileaf Trio or Romain Trio, torn into bite size pieces

cup
hummus
either store-bought or homemade like the recipe in notes below*

1/2
pint
/ 200 grams cherry or small tomatoes
halved

1/4
red onion
very thinly sliced

tbsp
fresh mixed herbs
such as basil, dill, cilantro, mint, etc., optional

red wine vinegar
to drizzle

olive oil
to drizzle

salt and pepper
to season

Preheat oven to 350°F. Heat flatbreads for 5-7 minutes or until warm through and slightly browned.

Top flatbreads with 1/2 cup hummus each, Inspired Greens Lettuce, tomatoes, red onion, and fresh herbs (if using).

Drizzle the top with red wine vinegar, olive oil, and season very lightly with salt and pepper.
