Ingredients

  • 1/2 small shallot, chopped
  • 1.5 cups pomegranate arils (seeds removed from pomegranate)
  • 1/2 cup olive oil
  • 1.5 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 tbsp red wine vinegar
  • 1 cup chopped fresh mint
  • 1 pinch kosher salt
  • 1 pinch black pepper

Instructions

  1. Combine shallot, pomegranate seeds, oil, zest, juice, vinegar, and mint in a small bowl. Season with salt and pepper.

  2. This recipe makes approximately 2-2.5 cups.

Recipe Notes

* Relish can be made 1 day ahead (without mint). Cover and chill. Add mint immediately before serving.
