It’s one pot and completely easy to clean thanks to the Instant Pot, this dish has all the winning attributes.
I also love a dish that I can rely on without going to the grocery store multiple times for. Most of the ingredients in this easy Instant Pot recipe are items found in your fridge or pantry and there are 7 ingredients! That includes a dried herb, rice, and salt … so really 4 other basic ingredients that are easy to find.
Considering the times we all are going through during the pandemic, this Instant Pot Chicken and Rice recipe is a welcome sight.
Can you cook rice and meat at the same time in the Instant Pot?
You sure can. Cooking the rice and meat together gives the rice some extra flavour boost.
I recommend cutting the meat up into smaller, bite sized pieces, so that the meat and rice cook in the same amount of time. The goal is to have fluffy light rice and cooked tender meat. I found that hard to do with bigger pieces of meat.
One thing that’s not to be skipped is rinsing the rice. Please, rinse your rice! It’s so starchy and without rinsing rice ends up being sticky instead of light and fluffy.
I rinse the rice in a strainer while moving it around for close to a minute. If you don’t have strainer, place rice in a large bowl with water and swish around, drain holding rice back and repeat until water is no longer cloudy.

A true dump and go Instant Pot Chicken and Rice recipe with delicious Greek flavours.
- 500 grams boneless skinless chicken thighs, sliced into bite sized pieces OR 2 boneless skinless chicken breasts
- 2 cups basmati rice, well rinsed
- 2 1/2 cups chicken broth
- 3 cloves garlic, minced
- 2 tsp dried oregano or 2 tbsp fresh chopped oregano
- 1 small lemon, juice and zest
- 1/2 tsp fine sea salt
Add chicken, rice, chicken broth, garlic, oregano, lemon juice and zest, and salt to Instant Pot*.
Place lid on Instant Pot with the steam release handle set to sealing and cook at HIGH pressure for 4 minutes.
Allow Instant Pot to naturally release (wait for float valve to decompress naturally), carefully open lid and fluff rice.
Top with more lemon juice, zest and salt if desired.
