Vanilla Bourbon Pear Baby Dutch Pancake is a dreamy brunch dish. Light and fluffy pancake with layers of vanilla and pear flavouring.
I think it’s hard to find a really good pancake recipe, or as a friend said, it’s hard to just straight up crave pancakes. Waffles? French Toast? Easy cravings. Pancakes however, need a hearty appetite and some TLC to make it work.
This recipe is easy to crave as it’s a light pancake with pears, bourbon, and brown sugar. You don’t even need syrup. That’s correct, I’m advocating no syrup in a pancake recipe. It should be against the rules, but I’m willing to vouch for this guy. The good old Baby Dutch Pancake with pear in a vanilla bourbon sauce.
The best part of a Baby Dutch Pancake is how it becomes layered with flavours. And not in a flat way like regular pancakes do. You pour the batter over the pears in this recipe which allowed the batter seep between the pear slices and creates a pancake that is truly studded with flavour.
A Baby Dutch Pancake is incredibly quick and easy to make. My favourite part is diving right into the skillet to enjoy it. Or at least, that’s how we do it over here.

- 2 pears peeled and sliced
- 3 tbsp unsalted butter divided
- 2 tbsp brown sugar
- 1 tbsp bourbon
- 1 1/4 tsp vanilla divided into 1 tsp and 1/4 tsp
- 3 large eggs
- 3/4 cup whole milk
- 3/4 cup all-purpose flour
- 1/4 tsp kosher salt

Preheat oven to 425° F.

Whisk eggs, milk, flour, 1 tsp vanilla and salt in a medium bowl until smooth. Set aside.

Melt 1 tbsp butter in a 10" ovenproof skillet, preferably cast iron, over medium heat. Add pear slices, 1/4 tsp vanilla, bourbon, and brown sugar. Cook, tossing often, until pears are coated and have softened. About 5 minutes. Transfer to a plate.

Carefully wipe out skillet and heat in oven until very hot (about 8-10 minutes). Carefully add remaining 2 tbsp of butter and tilt to cover bottom and sides of pan. Add pears to middle of pan and pour batter over. Bake until pancake is puffed and golden brown around the edges and centre is set, but still custardy, 12-15 minutes.
