Pan Fried Cod with White Wine and Butter

Lightly seared Pan Fried Cod with White Wine and Butter. A healthy and easy cod recipe that comes together quickly. An elegant seafood recipe that’s still suitable to weekday meals.

I love being a bit of a sneaky cook. Recipes and dishes like this Pan Fried Cod look completely elegant and time-consuming, but really come together in a few minutes – like well under 15 minutes. They’re that quick, but use bright, flavourful ingredients everyone loves which ultimately results in a delicious main.

Nobilo is a classic Sauvignon Blanc from New Zealand that is sustainably grown: fresh, crisp, refreshing, citrusy, with tropical fruit flavours. It’s one of my favourite sipping wines that I share on the regular with family and friends. It’s also a perfect pairing for seafood, especially flaky tender white fish like cod. Nobilo can be found in the New Zealand section at retailers across Canada, including LCBO, Sobeys and Loblaws (Ontario), BC Liquor Stores and private retailers (BC).

With the degrading conditions of today’s oceans I try to do what I can to be ocean sustainable and kind, from using reef-friendly sunscreen (we live very close to the Pacific Ocean) to removing the use of plastic from everyday lives (shopping bags, produce bags, etc.) to buying sustainable seafood. It’s easy to do when you LOOK FOR THE MSC BLUE FISH LABEL.

The blue label is everywhere and it offers convenient options from prepared salmon, haddock, to frozen shrimp, scallops or even fillets of fish like cod or sole. The offerings from the MSC Blue Label makes it easy to identify sustainable seafood options that are good for our bodies and our oceans. 

MSC options vary by region and retailers but can be found at Loblaws, Whole Foods Markets, Costco, Walmart, Sobeys and other retailers.

Ingredients
  • 1 pound cod filets
  • 2 tbsp unsalted butter
  • 1 shallot, finely chopped (or 2 garlic cloves, minced)
  • 1/4 cup white wine
  • 1 pinch sea salt
  • 1 pinch ground black pepper
  • 1 tbsp fresh lemon juice
  • 1 tsp fresh chopped parsley

Instructions
  1. Heat a large frying pan over medium heat and melt butter.

  2. Add shallots (or garlic) and cook for 1-2 minutes or until shallots have softened. Add white wine and cook until reduced by about half, about 2-3 minutes.

  3. Add cod filets and cook, flipping once, for about 5-7 minutes - until cod is flaky and cooked through.

  4. Remove from heat and drizzle with lemon juice and sprinkle with parsley.
