3 Ingredient fresh Tomato recipe. Layers of puff pastry, soft cheese, and fresh juicy tomatoes for a deliciously fresh dish!

This 3 ingredient Tomato Tart is an easy and delicious fresh tomato recipe. Use smaller greenhouse tomatoes, such as cherry or grape tomatoes, for an easy to prepare lunch or appetizer when cut into smaller pieces.

This fresh tomato recipe uses store bought puff pastry, soft herbed cheese, and juicy small tomatoes. It takes little time to prepare an can stand up well to sitting on the counter for a few hours.

Tomato Tart on parchment paper with herbs.I love the light and flaky puff pastry (buy pre-rolled puff pastry to make this a serious dream to make) paired with herb laden soft cheese and topped with juicy tomatoes.

Not into cow’s cheese? Both soft goat’s cheese and soft sheep’s cheese would work really well in this recipe.

Make this as a light lunch in the summer or cut into smaller pieces over the holiday season for a truly easy appetizer.

A simple and easy to whip up rainbow Tomato Tart. Layers of puff pastry, soft cheese, and fresh juicy tomatoes for a deliciously fresh dish!

Ingredients
  • 1 lbs (454 grams) small tomatoes, such as cherry, cocktail or strawberry, sliced into 1/4" pieces
  • 1 package (150 grams) herb and garlic soft cheese, such as Boursin* Cheese
  • 1 package puffed pastry, thawed
  • 1/2 tsp flaky sea salt, to garnish
Instructions
  1. Preheat oven to 375 F. 

  2. Line your largest baking sheet with parchment paper. Roll out puffed pastry to fit baking sheet. Place pastry on baking sheet. Using a sharp knife mark a border of about 1" around the pastry (without fully perforating the pastry). Using a fork poke the pastry inside the border (this will allow the air to escape and prevent the entire tart from rising). Bake for 15-20 min, until pastry is golden brown and the border rose. Remove from oven and let completely cool. (Putting the pastry in the fridge is a good way to speed up the cooling process).

  3. Place cheese in a small bowl and mash with a fork to soften. Spread cheese over pastry, keeping inside your border.

  4. Top with tomato slices in any design you prefer. Season with salt and pepper.

* Boursin Cheese is a herb and garlic soft cheese that is easy to spread. Usually available in the deli section of local grocery stores.
